
Hasselback Potatoes
Hassleback potatoes or Potato à la Hasselbacken (Swedish: Hasselbackspotatis) are a type of baked potato that is cut about halfway through into thin, fan-like slices.

Ingredients
- 3 tbsp butter
- 3 tbsp olive oil
- 4 g arlic cloves
- 2 sprigs of rosemary
- 2 large potatoes
- salt
- Pepper

To make the herb butter, heat butter, olive oil, garlic and rosemary on low flame for 7-8 mins. Set it aside

Take a large potato , place to chopsticks on the sides and cut into 1 cm equal sections making sure you don’t cut through completely . The chopsticks will help you with that.

Place a potatoes on a baking tray. Drizzle with some prepared butter and season it with salt and pepper.

Bake at 200C for 55-60 mins.

Once baked, drizzle again with the remaining herb butter and serve with some sour cream . You can also add some cheese while baking to make it cheesy.
