
Healthy Vegan Banana Bread
Todays recipe is my favourite Banana bread recipe. This banana bread is so moist and has the most tender crumb . Its the perfect partner for your hot cup of tea or coffee. Heres how to make it.

Ingredients
- 330 g ) 3 medium ripe bananas
- 150 ml ) 1/2 cup+2 tbsp vegetable oil
- 150 g ) 3/4 cup jaggery powder
- 5 tbsp coconut milk
- 1 tsp vanilla extract
- 3 tsp lemon juice
- 225 g ) whole wheat flour
- 60 g ) almond flour
- 1 1/2 tsp baking powder
- 3/4 tsp baking soda
- 1/4 tsp salt
- 3/4 tsp cinnamon
- 175 g ) dark chocolate chips

Preheat the oven to 180C.

In a bowl, mash 3 bananas. Add oil, vanilla , milk and lemon juice and combine.

In another bowl, sift together flour, baking powder, baking soda, salt and cinnamon. Add almond flour and combine.

Add the dry mixture to the wet mixture and gently fold in. Add 3/4 amount of chocolate chips and combine.

Transfer the batter to a greased and lined 8” loaf pan and bake the bread at 180C for 55-60mins . Insert a toothpick in the centre and check if the bread is baked in the centre.

Let it cool on a cooling rack for 5 mins and then unmould the cake and let it cool on the wire rack completely.
