Ingredients
- 1 cup cashews
- 1/2 cup sugar
- 1 tbsp ghee
- 1/2 cup water (only to help the sugar heat evenly)

Crush cashews till you get a powder. Blend in pulses to avoid oil releasing from the cashews .

In a Non stick pan, add sugar and 1/2 cup water and heat. Once the sugar dissolves, cool for another 2-3 mins.

Add the cashew powder and keep mixing on low flame . Keep cooking till the mixture starts leaving the pan. This might take up to 15mins.

Then grease a plate and transfer the cashew mixture into it. With the help of spatula, keep folding the mixture to cool it down a little. Add ghee and continue mixing . You will notice the mixture thickening.

Grease a parchment paper with ghee and add the kaju Katli mixture to add parchment paper . Flatten it and place another parchment paper on top. Roll it out thin and add varaq. It’s optional .

Cut into diamonds and let it set at room temperature for 2 hours
