Korean Smashed Cucumber salad

Summer is just around the corner. Its time for refreshing cold salads. This cucumber salad is so refreshing and delicious.

Ingredients

  • 2 medium English cucumber
  • 1 medium onion , sliced
  • 2 cloves of garlic, finely chopped
  • 1 tbsp soy sauce
  • 2 tsp sesame oil
  • 1 tsp vinegar
  • 2 tsp honey
  • 1 1/2 tsp Gochugaru or chilli flakes
  • 1 tsp salt
  • 1 tsp toasted sesame seeds

Instructions

    Smash cucumber with a rolling pin on a tissue paper . Cut the cucumber into chunks.

    IN a small bowl, mix together soy sauce, vinegar, oil and honey .

    Add the onion ,garlic, gochugaru , salt and the soy sauce mixture into the cucumber and toss .#

    Serve immediately. Sprinkle the sesame seeds and
