
Linzer cookies from Austria
Delicous jam filled crispy buttery cookies are a perfect treat with a cup of coffee. This cookie originated in the Linz region of Austria. This cookie is usually made during Christmas.

Ingredients
- 100 g cold, softened butter
- 1/2 cuo powdered sugar
- 1/2 tsp vanillla
- 1.5 cups maida
- 1/2 cup jam

In a bowl, whisk together butter, sugar and vanilla.

Add maida and mix till it resembles wet sand.

Transfer onto a baking paper sheet. Mix with hand to form a. Dough and give a square shape. Wrap in the same paper and refrigerate for 30mjns

Place one more sheet of baking paper and roll the dough using a rolling pin.

Cut out cookies using a cookie cutter. Cut out the centre of half the cookies

Bake at 170C for 10-12 mins

Once cooled completely, add jam in the centre. Sandwich the cookies and enjoy!
