Khaman dhokla are a staple in my Gujarati household . Everyone loves these moist and fluffy khaman. They are sweet, salty , sour with a hint of spice. The perfect balance.

In a bowl mix together water ,sugar ,lemon juice ,oil and give it a good mix ,

Sift basin and mix the batter. In a small bowl and mix together water and Eno and add to the batter and whisk the batter vigourously. Let the batter rest for five minutes..

In a vessel boil water and place a stand inside. Grease an aluminium or steel plate Let it heat for 15 minutes.

Pour dhokla batter into The hot plate and Cook dhokla for 20 minutes with the lid covered. Check with a toothpick inserted into the batter. Let it cool completely.

Meanwhile make The Tadka. Heat oil in a pan and add mustard seeds, hing, sesame seeds, chillies and curry leaves. And cook till it splutters. Add water and sugar and cook till it comes to a boil. Add@lemon juice and stir .

Once the dhokla has cooled completely , add the tadka liquid into the dhokla and let it soak for half an hour. Make sure the tadka liquid is still warm when you add to the dhokla .

garnish with coriander and serve .
